Shrimp and Vegetable Stir-Fry with Ginger-Soy Sauce

Ingredients
- 14 oz shrimp
- 2 cups broccoli florets
- 1 cup bell peppers
- 1 cup carrots
- 3 tbsp soy sauce
- 1 tbsp fresh ginger
- 2 cloves garlic
- 1 tsp sesame oil
- 1 tsp cornstarch
- 2 tbsp water
Instructions
- Step 1: Pat shrimp dry and toss with 1 tsp cornstarch. Heat 1 tbsp oil in a wok or large skillet over high heat until shimmering.
- Step 2: Add shrimp in a single layer and cook for 1 minute per side until pink and opaque. Remove and set aside.
- Step 3: Add remaining oil to the skillet, then stir-fry minced ginger and garlic for 30 seconds until fragrant.
- Step 4: Add broccoli, bell peppers, and carrots. Stir-fry for 3 minutes until vegetables are crisp-tender.
- Step 5: Whisk soy sauce, 2 tbsp water, and remaining cornstarch. Pour into skillet, add shrimp, and cook for 2 minutes until sauce thickens and coats everything. Stir in sesame oil.
