- 2 medium zucchinis
- 2 tbsp olive oil
- 8 oz shrimp
- 3 cloves garlic
- 1 lemon
- 1/4 cup white wine
- 1/4 tsp salt
- 1/8 tsp black pepper
- 1 tbsp fresh parsley
Instructions
- Step 1: Spiralize 2 medium zucchinis into noodles, then pat dry with a clean kitchen towel to remove excess moisture.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add 8 oz peeled and deveined shrimp, season with 1/4 tsp salt and 1/8 tsp black pepper, and cook for 2-3 minutes per side until pink and opaque. Remove shrimp and set aside.
- Step 3: Add 1 tbsp olive oil, 3 minced garlic cloves, and 1 tbsp lemon zest to the skillet. Sauté over medium heat for 1 minute until fragrant, avoiding browning.
- Step 4: Add 4 cups zucchini noodles and 1 tbsp lemon juice to the skillet, stirring to combine. Cook for 2 minutes until zucchini noodles are tender-crisp.
- Step 5: Return shrimp to the skillet, add 1/4 cup white wine, and cook for 1 minute to meld flavors.
- Step 6: Season with additional salt and pepper to taste, then garnish with 1 tbsp chopped fresh parsley.
