- 8 oz shrimp
- 2 medium zucchini
- 2 tbsp olive oil
- 3 cloves garlic
- 1 lemon
- 1/4 cup fresh parsley
- 1/4 tsp red pepper flakes
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and opaque; remove and set aside.
- Step 2: Add remaining 1 tbsp olive oil to the skillet, then add minced garlic and red pepper flakes. Sauté for 1 minute until fragrant and golden.
- Step 3: Add spiralized zucchini noodles and cook for 2-3 minutes, stirring frequently, until tender-crisp.
- Step 4: Return shrimp to skillet, add 2 tbsp lemon juice, 1 tbsp lemon zest, and chopped parsley. Toss for 1 minute until heated through. Season with salt and pepper.
