Instructions
- Step 1: In a medium saucepan, combine 2 cups diced mixed seasonal fruit, 3 tablespoons granulated sugar, 1/2 split vanilla bean with seeds, and 1/4 cup water.
- Step 2: Bring to a gentle simmer over medium heat, stirring occasionally, then reduce heat to low and cook for 15 minutes until fruit is tender and sauce thickens.
- Step 3: Remove vanilla bean and discard. Stir in 1 tablespoon chopped fresh mint until evenly distributed.
