Simple Molasses Oatmeal Cookies

Ingredients
- 1/2 cup, unsalted, softened butter
- 1/2 cup, packed brown sugar
- 1/4 cup molasses
- 1 large egg
- 1 tsp vanilla extract
- 1 1/2 cups all-purpose flour
- 1 tsp cinnamon
- 1/2 tsp ginger
- 1/4 tsp salt
- 1/2 cup rolled oats
Instructions
- Step 1: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Step 2: In a large bowl, beat 1/2 cup softened unsalted butter and 1/2 cup packed light brown sugar until creamy, about 2 minutes. Add 1/4 cup molasses, 1 large egg, and 1 tsp vanilla extract, and beat until well combined.
- Step 3: In a separate bowl, whisk together 1 1/2 cups all-purpose flour, 1 tsp ground cinnamon, 1/2 tsp ground ginger, and 1/4 tsp salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Step 4: Stir in 1/2 cup rolled oats until evenly distributed.
- Step 5: Drop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them 2 inches apart. Flatten slightly with the back of a spoon.
- Step 6: Bake for 12-14 minutes, or until the edges are golden brown and the centers are set. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
