Slow-Cooked Brisket with Apple Cider Glaze

Ingredients
- 3 lbs beef brisket
- 2 tbsp olive oil
- 1 large, finely chopped onion
- 3 cloves, minced garlic
- 1/2 cup apple cider
- 1/4 cup brown sugar
- 1 tbsp Dijon mustard
- 1 tsp smoked paprika
- 1/2 tsp black pepper
- 1/2 cup beef broth
Instructions
- Step 1: Heat 2 tbsp olive oil in a large Dutch oven over medium-high heat. Season the 3 lbs beef brisket with salt and pepper, then sear on all sides for 4-5 minutes until deeply browned.
- Step 2: Add the 1 large onion, finely chopped, and 3 cloves garlic, minced, to the Dutch oven, and sauté for 2 minutes until fragrant and softened.
- Step 3: Stir in 1/2 cup apple cider, 1/4 cup brown sugar, 1 tbsp Dijon mustard, 1 tsp smoked paprika, and 1/2 tsp black pepper, then pour in 1/2 cup beef broth.
- Step 4: Transfer the mixture to a slow cooker, cover, and cook on low for 8 hours until the brisket is fork-tender.
- Step 5: Remove the brisket, let rest for 15 minutes, then slice against the grain. Strain the cooking liquid into a saucepan and reduce over medium-high heat for 10 minutes until thickened to a glaze.
