Slow-Cooked Mojo Beef with Fried Plantains

Ingredients
- 1.5 lbs flank steak
- 1/4 cup olive oil
- 3 cloves garlic
- 2 tbsp fresh oregano
- 1/4 cup fresh cilantro
- 3 tbsp lime juice
- 1 medium red bell pepper
- 1 medium yellow onion
- 4 medium plantains
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Step 1: Trim excess fat from 1.5 lbs flank steak, then slice against the grain into 1/4-inch strips. In a bowl, whisk 1/4 cup olive oil, 3 minced garlic cloves, 2 tbsp fresh oregano, 1/4 cup fresh cilantro, and 3 tbsp lime juice. Add the beef strips, coating evenly, and marinate for 30 minutes at room temperature.
- Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add 1 sliced red bell pepper and 1 diced yellow onion, cooking for 5 minutes until softened and slightly caramelized. Add the marinated beef with all marinade, stirring to coat. Simmer uncovered for 20 minutes until beef is tender and sauce has reduced slightly.
- Step 3: While beef cooks, slice 4 medium plantains into 1/2-inch rounds. Heat 2 tbsp oil in a separate skillet over medium heat. Add plantain slices in a single layer, cooking for 3-4 minutes per side until golden brown and caramelized. Season with 1 tsp salt and 1/2 tsp black pepper while cooking.
