  1. Step 1: Trim excess fat from 1.5 lbs flank steak, then slice against the grain into 1/4-inch strips. In a bowl, whisk 1/4 cup olive oil, 3 minced garlic cloves, 2 tbsp fresh oregano, 1/4 cup fresh cilantro, and 3 tbsp lime juice. Add the beef strips, coating evenly, and marinate for 30 minutes at room temperature.
  2. Step 2: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add 1 sliced red bell pepper and 1 diced yellow onion, cooking for 5 minutes until softened and slightly caramelized. Add the marinated beef with all marinade, stirring to coat. Simmer uncovered for 20 minutes until beef is tender and sauce has reduced slightly.
  3. Step 3: While beef cooks, slice 4 medium plantains into 1/2-inch rounds. Heat 2 tbsp oil in a separate skillet over medium heat. Add plantain slices in a single layer, cooking for 3-4 minutes per side until golden brown and caramelized. Season with 1 tsp salt and 1/2 tsp black pepper while cooking.
