Slow-Cooked Moong Dal with Fresh Mint

Ingredients
- 1 cup moong dal
- 1/4 cup, chopped fresh mint
- 1 tbsp, grated ginger
- 1/2 tsp turmeric powder
- 1/2, finely chopped onion
- 1 medium, diced tomato
- 2 tbsp vegetable oil
Instructions
- Step 1: Rinse 1 cup moong dal under cold water until water runs clear. In a pot, heat 2 tbsp vegetable oil over medium heat, then add 1/2 chopped onion and 1 tbsp grated ginger. Sauté for 5 minutes until golden.
- Step 2: Stir in 1 medium diced tomato and 1/2 tsp turmeric powder. Cook for 3 minutes until tomato breaks down.
- Step 3: Add the rinsed moong dal and 3 cups water. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 40 minutes until dal is creamy.
- Step 4: Stir in 1/4 cup chopped fresh mint and cook for 2 more minutes. Adjust salt to taste before serving.
