Slow-Cooked Moong Dal with Fresh Mint

  1. Step 1: Rinse 1 cup moong dal under cold water until water runs clear. In a pot, heat 2 tbsp vegetable oil over medium heat, then add 1/2 chopped onion and 1 tbsp grated ginger. Sauté for 5 minutes until golden.
  2. Step 2: Stir in 1 medium diced tomato and 1/2 tsp turmeric powder. Cook for 3 minutes until tomato breaks down.
  3. Step 3: Add the rinsed moong dal and 3 cups water. Bring to a gentle boil, then reduce heat to low. Cover and simmer for 40 minutes until dal is creamy.
  4. Step 4: Stir in 1/4 cup chopped fresh mint and cook for 2 more minutes. Adjust salt to taste before serving.
