Slow-Cooked Pork Adobo with Green Plantains

- 1.5 pounds, cut into 1-inch cubes pork shoulder
- 1/2 cup white vinegar
- 6 cloves, minced garlic
- 1/4 cup soy sauce
- 3 medium, sliced into 1/2-inch rounds green plantains
- 2 tablespoons brown sugar
- 1 teaspoon black pepper
Instructions
- Step 1: In a bowl, mix 1/2 cup white vinegar, 6 minced garlic cloves, 1/4 cup soy sauce, and 1 teaspoon black pepper, then toss with 1.5 pounds pork shoulder cubes. Marinate for 30 minutes.
- Step 2: Heat 1 tablespoon oil in a Dutch oven over medium heat, add marinated pork, and sear for 4 minutes until golden on all sides.
- Step 3: Add 3 sliced green plantain rounds, 2 tablespoons brown sugar, and 1 cup water, then cover and simmer on low heat for 1.5 hours until pork is fork-tender and plantains are caramelized at the edges.
- Step 4: Remove plantains, slice, and arrange around the pork before serving.
