Slow-Simmered Beef Short Rib Stew with Root Vegetables

  1. Step 1: Pat short ribs dry with paper towels and season with 1 tsp salt and 1/2 tsp black pepper. Heat 2 tbsp olive oil in a Dutch oven over medium-high heat. Sear ribs in batches until browned on all sides, about 4 minutes per side, then set aside.
  2. Step 2: Add carrots, parsnips, and potatoes to the pot. Stir in 2 tbsp all-purpose flour and cook for 1 minute to eliminate raw flour taste.
  3. Step 3: Return ribs to the pot. Add diced tomatoes, beef broth, thyme, and bay leaves. Bring to a gentle simmer.
  4. Step 4: Cover and reduce heat to low. Simmer for 3 hours, stirring occasionally, until meat is fork-tender and vegetables are soft.
