  1. Step 1: Preheat oven to 400°F. Toss 1 lb peeled carrot sticks with 1 tbsp olive oil, 2 tbsp maple syrup, 1/2 tsp smoked paprika, and 1/4 tsp salt on a baking sheet.
  2. Step 2: Roast for 20 minutes, stirring once halfway, until carrots are tender and caramelized at the edges.
  3. Step 3: Remove from oven and stir in 1/4 cup sliced almonds and 1 tsp chopped thyme. Return to oven for 3 minutes to toast almonds, then serve warm.
