Smoky Maple-Glazed Carrots with Almonds

Ingredients
- 1 lb, peeled and cut into 1-inch sticks carrots
- 2 tbsp maple syrup
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 cup, sliced almonds
- 1/4 tsp salt
- 1 tsp fresh, chopped thyme
Instructions
- Step 1: Preheat oven to 400°F. Toss 1 lb peeled carrot sticks with 1 tbsp olive oil, 2 tbsp maple syrup, 1/2 tsp smoked paprika, and 1/4 tsp salt on a baking sheet.
- Step 2: Roast for 20 minutes, stirring once halfway, until carrots are tender and caramelized at the edges.
- Step 3: Remove from oven and stir in 1/4 cup sliced almonds and 1 tsp chopped thyme. Return to oven for 3 minutes to toast almonds, then serve warm.
