Snow Pea and Ginger Stir Fry

- 1 lb, trimmed snow peas
- 2 tbsp vegetable oil
- 3 cloves, minced garlic
- 1 tbsp, grated fresh ginger
- 1/4 cup soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/2 cup, sliced bell peppers
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a wok over high heat, add 3 minced garlic cloves and 1 tbsp grated fresh ginger, and stir-fry for 30 seconds until fragrant.
- Step 2: Add 1 lb trimmed snow peas and 1/2 cup sliced bell peppers, stir-frying for 3-4 minutes until crisp-tender.
- Step 3: Whisk 1/4 cup soy sauce, 1 tbsp rice vinegar, and 1 tsp sugar in a small bowl, then pour over the vegetables.
- Step 4: Cook for an additional 2 minutes until the sauce thickens slightly and coats the vegetables.
