Soy-Ginger Beef Stir-Fry with Rice Noodles

Ingredients
- 12 oz flank steak
- 8 oz rice noodles
- 2 cups broccoli
- 1 bell pepper
- 1/2 cup onion
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp ginger
- 2 cloves garlic
- 1 tsp sesame oil
- 2 tbsp vegetable oil
Instructions
- Step 1: Cook 8 oz rice noodles according to package directions; drain and set aside. Whisk 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, 1 tbsp grated ginger, and 2 minced garlic cloves in a small bowl.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet or wok over high heat. Add 12 oz thinly sliced flank steak and stir-fry for 3-4 minutes until browned but not fully cooked. Remove steak and set aside.
- Step 3: Add broccoli, bell pepper, and onion to the skillet, stir-fry for 4-5 minutes until crisp-tender. Return steak to skillet, add the prepared sauce, and toss to coat. Add cooked rice noodles and toss until heated through, about 2 minutes. Drizzle with 1 tsp sesame oil and garnish with 2 tbsp sliced green onions.
