Soy-Ginger Braised Pork Belly with Pickled Radish

Ingredients
- 1.5 lbs pork belly
- 3 tbsp soy sauce
- 2 tbsp mirin
- 1.5 oz, thinly sliced fresh ginger
- 1 tbsp white sugar
- 1 cup, thinly sliced pickled radish
- 2 tbsp sake
Instructions
- Step 1: Pat 1.5 lbs pork belly dry with paper towels and season lightly with salt. Heat 2 tbsp neutral oil in a heavy pot over medium-high heat until shimmering, then sear pork belly for 5 minutes per side until golden brown.
- Step 2: Add 3 tbsp soy sauce, 2 tbsp mirin, 1.5 oz thinly sliced fresh ginger, 1 tbsp white sugar, and 2 tbsp sake to the pot. Stir to combine, then bring to a gentle simmer.
- Step 3: Cover pot with a tight-fitting lid, reduce heat to low, and braise for 1 hour 15 minutes until pork is fork-tender. Remove pork and let rest for 10 minutes.
- Step 4: Strain braising liquid into a small saucepan, bring to a simmer over medium heat, and reduce until thickened enough to coat the back of a spoon (about 8 minutes). Slice 1 cup pickled radish thinly and arrange on a plate. Place sliced pork belly on top and drizzle with reduced sauce.
