Soy-Ginger Chicken Stir Fry with Broccoli

- 1 lb, thinly sliced boneless chicken thighs
- 2 cups, cut into florets broccoli
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp, grated fresh ginger
- 2 cloves, minced garlic
- 1 tsp sesame oil
- 1 tsp cornstarch
- 2 tbsp vegetable oil
Instructions
- Step 1: Whisk soy sauce, rice vinegar, ginger, garlic, sesame oil, and cornstarch in a small bowl until smooth.
- Step 2: Heat 2 tbsp vegetable oil in a wok or large skillet over high heat. Add chicken in a single layer and cook 3-4 minutes per side until golden. Remove chicken from pan.
- Step 3: Add broccoli to pan and stir-fry for 4-5 minutes until vibrant green and crisp-tender.
- Step 4: Return chicken to pan, pour sauce over everything, and stir constantly for 2-3 minutes until sauce thickens and coats ingredients evenly.
