Soy-Ginger Glazed Salmon with Bok Choy Stir-Fry

Ingredients
- 4 (6 oz each), skin-on salmon fillets
- 3 tbsp soy sauce
- 1 tbsp, grated fresh ginger
- 1 tbsp honey
- 2 cups, chopped bok choy
- 1/2 cup, sliced shiitake mushrooms
- 1 tsp sesame oil
- 2 cloves, minced garlic
Instructions
- Step 1: Mix 3 tbsp soy sauce, 1 tbsp grated ginger, and 1 tbsp honey in a bowl. Brush over 4 (6 oz) salmon fillets, skin-side down.
- Step 2: Heat 1 tsp sesame oil in a skillet over medium-high. Place salmon skin-side down and cook for 6 minutes until skin is crisp. Flip and cook 3 minutes more.
- Step 3: Remove salmon; add 2 minced garlic cloves and 1/2 cup sliced shiitake mushrooms to skillet. Stir-fry for 2 minutes until mushrooms soften.
- Step 4: Add 2 cups chopped bok choy and cook for 3 minutes until vibrant green and tender-crisp. Return salmon to pan, spooning pan sauce over top before serving.
