- 1 tbsp rice vinegar

- 1 tsp cornstarch
- 1 tsp sesame oil
- 2 cloves garlic
- 1 tbsp ginger
- 3 scallions
- 4 oz mushrooms
- 2 tbsp vegetable oil
- 1.5 cups cooked rice
Instructions
- Step 1: Whisk 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp brown sugar, and 1 tsp cornstarch in a small bowl until sugar dissolves; set aside.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat until shimmering, then add 8 oz thinly sliced beef and cook for 2-3 minutes until browned but not fully cooked, stirring occasionally.
- Step 3: Add 2 minced garlic cloves, 1 tbsp minced ginger, and 4 oz sliced mushrooms to the skillet, stirring for 1 minute until mushrooms begin to soften and release moisture.
- Step 4: Pour the soy sauce mixture over the beef and vegetables, stirring to coat everything evenly, then add 3 sliced scallions (white parts only) and cook for 2 minutes until sauce thickens and coats the ingredients.
- Step 5: Stir in 1 tsp sesame oil and the remaining 3 sliced scallions (green parts), cooking for 30 seconds until fragrant, then serve immediately over 1.5 cups cooked rice.
