Soy-Glazed Black Cod with Sesame

Ingredients
- 450g black cod fillets
- 60ml soy sauce
- 30ml mirin
- 15g sugar
- 15ml sesame oil
- 10g white sesame seeds
- 10g fresh ginger
- 2 garlic cloves
- 4 green onions
Instructions
- Step 1: In a small bowl, whisk together soy sauce, mirin, 15g sugar, and 15ml sesame oil until sugar dissolves. Set aside.
- Step 2: Thinly slice 10g fresh ginger and mince 2 garlic cloves. Cut 4 green onions into 2cm pieces.
- Step 3: Pat cod fillets dry with paper towels. Heat a skillet over medium-high heat and add a thin layer of oil. Sear cod skin-side down for 3 minutes until golden brown, then flip and cook for 2 minutes.
- Step 4: Pour soy glaze over cod and simmer for 2 minutes, turning to coat evenly. Add ginger, garlic, and green onions, cooking for 1 more minute until aromatics are fragrant.
- Step 5: Transfer to a plate, sprinkle with 10g toasted sesame seeds, and serve immediately.
