Soy-Glazed Chicken Stir-Fry with Snap Peas

Ingredients
- 1 lb, thinly sliced chicken breast
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 2 cloves, minced garlic
- 1 tsp grated ginger
- 2 cups snap peas
- 1 tsp sesame oil
- 2 cups cooked rice
Instructions
- Step 1: Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, 2 minced garlic cloves, and 1 tsp grated ginger in a small bowl.
- Step 2: Heat 1 tsp sesame oil in a large skillet over medium-high heat. Add 1 lb thinly sliced chicken and cook for 5-6 minutes until golden and cooked through, then remove and set aside.
- Step 3: Add 2 cups snap peas to the skillet and stir-fry for 3-4 minutes until bright green and crisp-tender.
- Step 4: Return chicken to the skillet, pour in the soy sauce mixture, and cook for 1-2 minutes until sauce thickens and coats everything. Serve over 2 cups cooked rice.
