Soy-Glazed Salmon with Asparagus and Cherry Tomatoes

Ingredients
- 4 (6 oz each), skin-on salmon fillets
- 3 tbsp soy sauce
- 2 tbsp maple syrup
- 2 cloves, minced garlic
- 1 bunch (12 oz), trimmed asparagus
- 1 cup cherry tomatoes
- 1 tbsp olive oil
Instructions
- Step 1: Preheat oven to 425°F (220°C). Whisk together 3 tbsp soy sauce, 2 tbsp maple syrup, and 2 minced garlic cloves in a small bowl.
- Step 2: Place salmon skin-side down on a baking sheet lined with parchment. Rub 1 tbsp olive oil over salmon, then pour half the soy glaze mixture over the top. Arrange asparagus and cherry tomatoes around the salmon.
- Step 3: Roast for 15-18 minutes until salmon is opaque and flakes easily with a fork, basting occasionally with remaining glaze. The asparagus should be tender-crisp and tomatoes slightly burst.
