Soy-Glazed Salmon with Sesame-Cucumber Salad

Ingredients
- 2 (6 oz each) salmon fillets
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp rice vinegar
- 1/2 tsp, grated ginger
- 1 tbsp sesame oil
- 1, thinly sliced cucumber
- 1/4 cup rice vinegar
- 1 tbsp sesame seeds
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions
- Step 1: Whisk together 2 tbsp soy sauce, 1 tbsp honey, 1 tsp rice vinegar, and 1/2 tsp grated ginger in a small bowl.
- Step 2: Season salmon fillets with 1/4 tsp salt and 1/8 tsp black pepper, then heat 1 tbsp sesame oil in a non-stick skillet over medium-high heat until shimmering.
- Step 3: Place salmon skin-side down in skillet and cook for 4 minutes until skin is crisp, flip, and cook 3 minutes more until opaque.
- Step 4: Brush salmon with soy-honey glaze during last minute of cooking, then remove from heat.
- Step 5: Toss 1 thinly sliced cucumber with 1/4 cup rice vinegar and 1 tbsp sesame seeds in a small bowl, letting marinate for 5 minutes.
- Step 6: Serve salmon with cucumber salad on the side, drizzling with reserved glaze.
