Soy-Glazed Stir-Fried Chicken with Broccoli

Ingredients
- 1.5 lbs chicken thighs
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tsp fresh ginger
- 2 cloves garlic
- 2 tbsp cornstarch
- 2 tbsp vegetable oil
- 3 cups broccoli florets
- 1 red bell pepper
- 1/4 cup water
- 2 tbsp soy sauce
Instructions
- Step 1: Prepare chicken: Combine 1.5 lbs chicken thigh strips, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, 1 tsp grated ginger, and 2 minced garlic cloves in a bowl. Mix well and let sit for 15 minutes. Toss with 2 tbsp cornstarch.
- Step 2: Stir-fry chicken: Heat 1 tbsp vegetable oil in a wok over medium-high heat. Add chicken and cook for 5 minutes until golden and cooked through. Remove and set aside.
- Step 3: Make sauce: Whisk 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, 1 tsp cornstarch, and 1/4 cup chicken broth in a small bowl.
- Step 4: Stir-fry vegetables: Heat 1 tbsp vegetable oil in the wok. Add 3 cups broccoli florets and 1 sliced red bell pepper. Stir-fry for 4 minutes until crisp-tender.
- Step 5: Combine: Return chicken to wok, pour in sauce, and stir until thickened and coating ingredients (2 minutes). Serve immediately.
