Soy-Glazed Tofu Stir-Fry with Broccoli and Rice

Ingredients
- 14 oz, pressed and cubed into 1-inch pieces extra-firm tofu
- 3 tbsp soy sauce
- 1 tbsp tamarind paste
- 1 tbsp brown sugar
- 1 tbsp rice vinegar
- 3 cups, cut into florets broccoli
- 2 cloves, minced garlic
- 1 tbsp, grated ginger
- 1 tbsp sesame oil
- 2 cups, cooked jasmine rice
Instructions
- Step 1: Whisk together soy sauce, tamarind paste, brown sugar, and rice vinegar in a small bowl until sugar dissolves. Set aside.
- Step 2: Heat 1 tbsp sesame oil in a wok or large skillet over medium-high heat. Add tofu cubes and cook for 8-10 minutes, turning occasionally, until golden brown on all sides.
- Step 3: Add minced garlic and grated ginger, stir-frying for 30 seconds until aromatic. Add broccoli florets and cook for 4-5 minutes until bright green and crisp-tender. Pour sauce over tofu and broccoli, tossing to coat. Cook for 1-2 minutes until sauce thickens. Serve immediately over cooked jasmine rice.
