Soy-Glazed Tofu with Stir-Fried Veggies

Ingredients
- 14 oz, pressed and cut into 1-inch cubes firm tofu
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp cornstarch
- 1 tbsp sesame oil
- 2 tbsp vegetable oil
- 2 cups broccoli florets
- 1, sliced red bell pepper
- 1 cup, sliced mushrooms
- 1 tbsp, minced ginger
- 2 cloves, minced garlic
Instructions
- Step 1: In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, 1 tbsp cornstarch, and 1 tbsp sesame oil to make the glaze.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add 14 oz cubed tofu and cook for 5-7 minutes, turning occasionally, until golden brown on all sides.
- Step 3: Remove tofu and set aside. Add 1 cup sliced mushrooms, 2 cups broccoli florets, and 1 sliced red bell pepper to the skillet. Stir-fry for 4-5 minutes until vegetables are crisp-tender.
- Step 4: Add 2 minced garlic cloves and 1 tbsp minced ginger to the skillet, stirring for 1 minute until fragrant.
- Step 5: Return tofu to skillet and pour in the glaze mixture along with 1/4 cup water. Stir continuously for 2-3 minutes until sauce thickens and coats tofu and vegetables.
- Step 6: Garnish with sesame seeds and serve immediately.
