Sparkling Berry Ginger Punch

Ingredients
- 1 cup mixed berries
- 1/2 cup, peeled and finely grated fresh ginger
- 1/4 cup honey
- 4 cups sparkling water
- 1 cup apple juice
- 1/2 cup fresh lemon juice
- 1/4 cup fresh mint leaves
- 1/4 cup sliced almonds
Instructions
- Step 1: In a small saucepan, combine 1 cup mixed berries, 1/2 cup fresh ginger, and 1/4 cup honey; simmer over medium heat for 10 minutes until berries break down and mixture thickens slightly.
- Step 2: Strain through a fine-mesh sieve into a large pitcher, pressing solids to extract all liquid; discard solids.
- Step 3: Add 4 cups sparkling water, 1 cup apple juice, and 1/2 cup fresh lemon juice to the pitcher; stir until combined.
- Step 4: Stir in 1/4 cup fresh mint leaves; cover and refrigerate for at least 1 hour.
- Step 5: Before serving, stir in 1/4 cup sliced almonds and garnish each glass with mint leaves.
