- 2 tbsp olive oil
- 4 cloves, minced garlic
- 1 cup, trimmed and cut into 1-inch pieces green beans
- 1 cup, florets broccoli
- 1/2 cup, sliced mushrooms
- 1/2 cup, halved cherry tomatoes
- 1 tbsp lemon juice
- 1/4 cup, chopped basil
Instructions
- Step 1: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 4 minced garlic cloves and cook for 1 minute until fragrant, stirring constantly to prevent browning.
- Step 2: Add 1 cup green beans, 1 cup broccoli florets, and 1/2 cup sliced mushrooms to the skillet. Stir to coat in oil and cook for 5 minutes, stirring occasionally, until vegetables are tender-crisp.
- Step 3: Stir in 1/2 cup halved cherry tomatoes, 1 tbsp lemon juice, and 1/4 cup chopped basil. Cook for 2 minutes until tomatoes are warmed through and flavors are combined, seasoning with salt and pepper to taste.
