Spectrum-Infused Tomato Consommé
A clear tomato broth with layered color intensity mimicking light spectrum properties.

Ingredients
- 2 tbsp Tomato paste
- 50 g Onion
- 30 g Carrot
- 30 g Celery
- 600 ml Vegetable stock
- 1 tsp Balsamic vinegar
- 1/4 tsp Salt
Instructions
- Step 1: Finely chop 50g onion, 30g carrot, and 30g celery. Sauté in a pot over medium heat with 1 tbsp water until softened (5 minutes).
- Step 2: Add 2 tbsp tomato paste and cook for 2 minutes until deepened in color, stirring constantly.
- Step 3: Pour in 600ml vegetable stock, 1 tsp balsamic vinegar, and 1/4 tsp salt. Simmer uncovered for 30 minutes, skimming off any foam that rises.
