Ingredients
- 8 oz penne pasta
- 2 tbsp olive oil
- 2 cloves, minced garlic
- 1/2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 tsp salt
- 1/4 tsp black pepper
- 2 tbsp, chopped fresh parsley
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil, add 8 oz penne pasta, and cook for 8-10 minutes until al dente; drain and set aside.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat, add 2 minced garlic cloves, and sauté for 1 minute until fragrant but not browned.
- Step 3: Add the drained penne pasta, 1/2 cup chicken broth, 1 cup shredded mozzarella, 1/2 cup shredded cheddar, and 1/4 cup grated Parmesan to the skillet; stir constantly until cheese melts and sauce coats pasta, about 3-4 minutes.
- Step 4: Season with 1/4 tsp salt and 1/4 tsp black pepper, then sprinkle with 2 tbsp chopped fresh parsley before serving.
