Spiced Dried Fruit Barmbrack

Ingredients
- 3 cups all-purpose flour
- 1 cup dried mixed fruit
- 1/2 cup brown sugar
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp allspice
- 1/2 cup butter
- 1/2 cup milk
- 2 eggs
- 1/4 cup raisins
- 1/4 cup candied peel
- 1/4 tsp salt
Instructions
- Step 1: Preheat oven to 350°F (175°C). Grease a 9x5-inch loaf pan.
- Step 2: Whisk 3 cups all-purpose flour, 1 tsp baking powder, 1/2 tsp cinnamon, 1/4 tsp allspice, and 1/4 tsp salt in a large bowl.
- Step 3: Beat 1/2 cup softened butter and 1/2 cup brown sugar until light and fluffy. Add 2 eggs one at a time, beating well after each addition.
- Step 4: Gradually add dry ingredients to wet, mixing until just combined. Stir in 1 cup dried mixed fruit, 1/4 cup raisins, and 1/4 cup candied peel.
- Step 5: Pour batter into the prepared loaf pan and smooth the top.
- Step 6: Bake for 50-60 minutes until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
