Spiced Peanut Chutney with Puffed Rice

Ingredients
- 1/2 cup roasted peanuts
- 2 tbsp tamarind paste
- 1/4 cup water
- 1/2 tsp cumin powder
- 1/4 tsp red chili powder
- 1/4 tsp salt
- 1/2 cup puffed rice
- 2 tbsp cilantro
Instructions
- Step 1: In a food processor, combine 1/2 cup roasted peanuts, 2 tbsp tamarind paste, 1/4 cup water, 1/2 tsp cumin powder, 1/4 tsp red chili powder, and 1/4 tsp salt. Process until smooth, adding a splash more water if needed to reach a spreadable consistency.
- Step 2: Transfer the chutney to a bowl and stir in 1/4 cup of the puffed rice and 2 tbsp chopped cilantro.
- Step 3: Serve immediately with the remaining 1/4 cup puffed rice on the side for dipping.
