Instructions
- Step 1: Preheat oven to 350°F. Grease and flour an 8-inch round cake pan.
- Step 2: Whisk together 1 1/2 cups all-purpose flour, 1 teaspoon ground cinnamon, 1/2 teaspoon ground allspice, 1/2 teaspoon ground ginger, 1 teaspoon baking powder, 1/2 teaspoon baking soda, and 1/4 teaspoon salt in a medium bowl.
- Step 3: In a large bowl, beat 1/2 cup softened unsalted butter, 3/4 cup granulated sugar, and 1/2 cup brown sugar until light and fluffy (about 3 minutes). Beat in 1 large egg and 1 teaspoon vanilla extract.
- Step 4: Add the dry ingredients to the wet ingredients in three parts, alternating with 1/2 cup buttermilk, beginning and ending with dry ingredients. Mix until just combined after each addition.
