Spiced Puffed Rice Snack with Peanuts

  1. Step 1: Heat 2 tbsp vegetable oil in a large skillet over medium heat. Add 1/2 tsp mustard seeds and 1 tsp cumin seeds, and cook for 1 minute until they start to pop.
  2. Step 2: Add 2 finely chopped green chilies and 1/4 tsp turmeric, and stir for 30 seconds until fragrant.
  3. Step 3: Add 4 cups puffed rice and 1/2 cup roasted peanuts, and toss well to coat with the spices. Cook for 3 minutes, stirring constantly, until the puffed rice is lightly toasted.
  4. Step 4: Stir in 1/2 tsp salt and 1 tbsp lemon juice. Cook for 1 more minute, then remove from heat.
