  1. Step 1: Press tofu for 15 minutes, then cut into 1-inch cubes. Toss with 1 tbsp cornstarch to coat evenly.
  2. Step 2: Heat 2 tbsp oil in a large skillet over medium-high heat. Add tofu cubes and cook for 5-6 minutes, turning occasionally, until golden and crisp on all sides.
  3. Step 3: Remove tofu and add broccoli and snap peas to the skillet. Stir-fry for 4 minutes until bright green and crisp-tender.
  4. Step 4: Add minced ginger, 3 sliced scallions, soy sauce, and rice vinegar. Stir until sauce bubbles, then return tofu to the skillet and toss to coat. Cook for 1 minute more until sauce thickens and coats ingredients.
