Spicy Cajun Shrimp Fajitas with Bell Peppers

Ingredients
- 1 pound shrimp
- 2 tablespoons avocado oil
- 1, sliced into thin strips red bell pepper
- 1, sliced into thin strips green bell pepper
- 1 medium, sliced into thin strips onion
- 1 teaspoon Cajun seasoning
- 1/4 teaspoon cayenne pepper
- 2 tablespoons, chopped cilantro

Instructions
- Step 1: Heat 2 tablespoons avocado oil in a large skillet over medium-high heat. Add 1 medium sliced onion and 1 red bell pepper, sliced, along with 1 green bell pepper, sliced, and cook for 5 minutes until peppers soften and develop light char.
- Step 2: Add 1 pound peeled and deveined shrimp to the skillet, stirring to coat. Sprinkle with 1 teaspoon Cajun seasoning and 1/4 teaspoon cayenne pepper. Cook for 3-4 minutes until shrimp turn pink and are fully cooked through.
- Step 3: Remove from heat, stir in 2 tablespoons chopped cilantro, and season with salt to taste. Serve immediately in crisp lettuce cups or over mixed greens.
