Spicy Momo Dumplings with Tangy Dipping Sauce

Step 1: In a bowl, combine 1/2 lb ground chicken, 1/2 cup chopped cabbage, 1/4 cup chopped carrots, 1/4 cup chopped green onions, 2 minced garlic cloves, 1 tsp grated ginger, 1 tbsp soy sauce, 1/2 tsp cumin, 1/4 tsp chili flakes, and salt to taste. Mix thoroughly and refrigerate for 30 minutes.
  2. Step 2: For the dough, mix 2 cups all-purpose flour, 1/4 tsp salt, and 1/2 cup warm water until a soft dough forms. Knead for 5 minutes, cover, and let rest for 30 minutes.
  3. Step 3: Roll the dough into thin circles (about 4 inches in diameter) and place 2 tablespoons of filling in the center of each. Fold and seal the edges to form half-moons, pressing firmly to seal.
  4. Step 4: Place the dumplings in a steamer basket lined with parchment paper and steam over boiling water for 10 minutes until the dough is translucent and cooked through.
  5. Step 5: While dumplings cook, whisk 1/4 cup tamarind paste, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp sugar, and 1/4 cup warm water to make the dipping sauce.
