Spinach and Zucchini Lasagna with Hidden Veggie Layers

Ingredients
- 12 oz lasagna noodles
- 2 cups ricotta cheese
- 1 cup, shredded mozzarella cheese
- 1/2 cup, grated Parmesan cheese
- 1 cup, finely chopped spinach
- 1 medium, grated zucchini
- 2 cups marinara sauce
- 1/2 cup cottage cheese
Instructions
- Step 1: Preheat oven to 375°F (190°C). Cook 12 oz lasagna noodles in a large pot of salted boiling water for 8-10 minutes until al dente; drain and set aside.
- Step 2: In a bowl, combine 2 cups ricotta cheese, 1/2 cup grated Parmesan cheese, 1 cup finely chopped spinach, and 1 cup grated zucchini (from 1 medium zucchini), mixing until fully incorporated.
- Step 3: Spread 1/2 cup marinara sauce evenly in the bottom of a 9x13-inch baking dish, then place 3 lasagna noodles over the sauce.
- Step 4: Spread half of the ricotta-veggie mixture over the noodles, then cover with 1/2 cup marinara sauce and 3 more noodles.
- Step 5: Spread the remaining ricotta-veggie mixture over the noodles, then top with 1/2 cup marinara sauce and the final 3 noodles.
- Step 6: Spread the remaining 1/2 cup marinara sauce over the top, then sprinkle 1 cup shredded mozzarella cheese evenly across the surface.
- Step 7: Cover with foil and bake for 25 minutes, then remove foil and bake for an additional 10 minutes until the cheese is golden and bubbly.
