Spotlight Stir-Fry with Crispy Tofu

Ingredients
- 12 oz cubed firm tofu
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 2 cups trimmed snow peas
- 1 cup julienned carrots
- 3 minced garlic cloves
- 1 tbsp cornstarch
- 2 tbsp vegetable oil
Instructions
- Step 1: Toss 12 oz cubed firm tofu with 1 tbsp cornstarch until evenly coated. Heat 2 tbsp vegetable oil in a wok over medium-high heat, then add tofu and cook for 5 minutes until golden and crispy on all sides.
- Step 2: Remove tofu and set aside. In the same wok, add 3 minced garlic cloves and stir-fry for 30 seconds until aromatic. Add 2 cups trimmed snow peas and 1 cup julienned carrots, cooking for 3 minutes until vegetables are crisp-tender.
- Step 3: Return tofu to the wok. Whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tsp sesame oil in a bowl, then pour over vegetables and tofu. Stir constantly for 2 minutes until sauce thickens and coats everything evenly.
