Stamppot with Smoked Sausage and Sauerkraut

Ingredients
- 2 lbs potatoes
- 1 cup sauerkraut
- 2 links smoked sausage
- 1 small onion
- 1 tsp dill
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup pickled onions
Instructions
- Step 1: Peel and dice 2 lbs potatoes into 1-inch cubes; boil in salted water for 15 minutes until fork-tender.
- Step 2: While potatoes cook, sauté sliced smoked sausage links in a skillet for 8 minutes until browned, then slice into 1/4-inch pieces.
- Step 3: Drain potatoes, return to pot, and mash with 1 cup sauerkraut, 1/2 tsp salt, 1/4 tsp black pepper, and 1 tsp dill until smooth.
- Step 4: Gently fold in sliced sausage and cook for 3 minutes to heat through; serve warm with 1/4 cup pickled onions on the side.
