Stir-Fried Chicken and Broccoli with Ginger and Coconut Aminos

Ingredients
- 1 lb, thinly sliced chicken breast
- 3 tbsp coconut aminos
- 2 tbsp olive oil
- 1 tbsp, minced fresh ginger
- 1 small, thinly sliced red bell pepper
- 2 cups, florets broccoli
- 2 cloves, minced garlic
- 1/4 tsp salt
Instructions
- Step 1: Place 1 lb thinly sliced chicken breast in a bowl. Add 3 tbsp coconut aminos, 1 tbsp minced fresh ginger, and 2 minced garlic cloves. Toss to coat and set aside for 10 minutes.
- Step 2: Heat 2 tbsp olive oil in a large skillet or wok over high heat until shimmering. Add 1 small red bell pepper, thinly sliced, and 2 cups broccoli florets. Stir-fry for 3-4 minutes until broccoli is bright green and crisp-tender.
- Step 3: Push vegetables to the side of the skillet. Add the marinated chicken and cook for 5-6 minutes, stirring occasionally, until no longer pink. Stir in any remaining marinade and cook for 1 minute more until sauce thickens slightly.
