Stir-Fried Chicken with Broccoli, Ginger, and Garlic

  1. Step 1: Heat 1 tbsp olive oil in a large skillet over medium-high heat. Add 1 lb sliced chicken breast strips and cook for 5-6 minutes, stirring occasionally, until golden brown and cooked through. Remove from skillet and set aside.
  2. Step 2: Add 1 tsp sesame oil to the skillet, then add 1 tbsp minced ginger and 3 minced garlic cloves. Sauté for 30 seconds until fragrant.
  3. Step 3: Add 2 cups broccoli florets and cook for 4-5 minutes, stirring frequently, until crisp-tender.
  4. Step 4: Return cooked chicken to skillet. Add 2 tbsp coconut aminos, 1/4 tsp salt, and 1/8 tsp black pepper. Toss to coat and cook for 1 minute until heated through.
