Stir-Fried Chicken with Ginger, Soy Sauce, and Snap Peas

Ingredients
- 1 lb, sliced thin chicken breasts
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp, grated fresh ginger
- 2 cloves, minced garlic
- 2 tbsp vegetable oil
- 2 cups, trimmed snap peas
- 1 cup, julienned carrots
- 1 tbsp cornstarch
- 1/4 cup water
Instructions
- Step 1: In a small bowl, whisk together 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tbsp honey, and 1 tbsp cornstarch. Set aside.
- Step 2: Heat 1 tbsp vegetable oil in a large skillet over medium-high heat. Add 1 lb sliced chicken and cook for 5-6 minutes until browned and cooked through; remove and set aside.
- Step 3: Add 1 tbsp vegetable oil to the skillet, then add 1 tbsp grated fresh ginger and 2 minced garlic cloves, stir for 30 seconds until fragrant.
- Step 4: Add 2 cups snap peas and 1 cup julienned carrots, stir-fry for 3 minutes until crisp-tender.
- Step 5: Return the 1 lb chicken to the skillet, add the soy sauce mixture and 1/4 cup water, and simmer for 2-3 minutes until sauce thickens and coats the chicken and vegetables.
