Stir-Fried Shrimp with Pineapple and Bell Peppers

Ingredients
- 12 oz large, peeled and deveined shrimp
- 1 cup (fresh or drained canned) pineapple chunks
- 1, sliced into thin strips red bell pepper
- 1, sliced into thin strips green bell pepper
- 2 tbsp vegetable oil
- 3 cloves, minced garlic
- 1 tbsp soy sauce
- 1 tbsp honey
- 1 tsp cornstarch
- 1/4 cup chicken broth
- to taste salt
- 2 tbsp, chopped fresh cilantro
Instructions
- Step 1: In a small bowl, whisk together 1 tbsp soy sauce, 1 tbsp honey, 1 tsp cornstarch, and 1/4 cup chicken broth to create a sauce.
- Step 2: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add 3 minced garlic cloves and stir for 30 seconds until fragrant, being careful not to burn.
- Step 3: Add the shrimp and stir-fry for 2-3 minutes until pink and opaque. Push shrimp to the side of the skillet.
- Step 4: Add the sliced red and green bell peppers and pineapple chunks to the skillet, then pour the sauce over all. Cook for 2-3 minutes, stirring constantly, until the sauce thickens and coats the ingredients.
- Step 5: Season with salt to taste, stir in 2 tbsp chopped cilantro, and serve immediately over rice.
