Stir-Fried Shrimp with Rice Noodles and Snap Peas

Ingredients
- 8 oz rice noodles
- 1 lb shrimp
- 2 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp honey
- 2 cloves garlic
- 1 tbsp fresh ginger
- 2 tbsp vegetable oil
- 2 cups snap peas
- 1 red bell pepper
- 1/4 cup scallions
- 1/4 cup cilantro
Instructions
- Step 1: Bring a large pot of water to a rolling boil. Add 8 oz rice noodles and cook for 5-7 minutes until tender but firm, then drain and rinse under cold water.
- Step 2: In a small bowl, whisk together 2 tbsp soy sauce, 1 tbsp rice vinegar, and 1 tbsp honey.
- Step 3: Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add 2 cloves minced garlic and 1 tbsp minced fresh ginger, stir-frying for 30 seconds until fragrant.
- Step 4: Add 1 lb peeled and deveined shrimp and 2 cups trimmed snap peas, stir-frying for 3-4 minutes until shrimp turn pink and opaque.
- Step 5: Add drained rice noodles and 1/2 cup of the sauce mixture, stirring until noodles are coated and heated through, about 2 minutes.
- Step 6: Toss in 1 thinly sliced red bell pepper and 1/4 cup sliced scallions, cooking for 1 minute until vegetables are crisp-tender.
- Step 7: Remove from heat, stir in 1/4 cup chopped cilantro, and serve immediately.
