Stir-Fried Snow Pea and Shiitake Medley

A vibrant, crisp-tender vegetable dish with earthy shiitake mushrooms and fresh snow peas, finished with a light ginger-sesame dressing.

  1. Step 1: Trim stems from 8 oz snow peas and slice diagonally. Remove stems from 4 oz shiitake mushrooms and slice thinly.
  2. Step 2: Heat 1 tsp sesame oil in a wok over high heat until shimmering. Add 1 tbsp minced ginger and stir for 15 seconds until fragrant.
  3. Step 3: Add snow peas and shiitake mushrooms. Stir-fry for 3-4 minutes until snow peas are bright green and tender-crisp.
  4. Step 4: Whisk 2 tsp soy sauce, 1 tsp rice vinegar, and 1/2 tsp sugar in a small bowl. Pour over vegetables and toss for 1 minute until evenly coated and glossy.
