Stir-Fried Spaghetti with Cherry Tomatoes and Garlic

Ingredients
- 8 oz spaghetti
- 1 cup cherry tomatoes
- 3 cloves, minced garlic
- 2 tbsp olive oil
- 1/4 cup, chopped fresh basil
- 1/2 tsp salt
- 1/4 tsp red pepper flakes
- 1/4 cup grated parmesan
Instructions
- Step 1: Bring a large pot of salted water to a rolling boil. Add 8 oz spaghetti and cook for 8-10 minutes until al dente, then drain and reserve 1/2 cup pasta water.
- Step 2: Heat 2 tbsp olive oil in a large skillet over medium heat. Add 3 minced garlic cloves and 1/4 tsp red pepper flakes, sautéing for 1 minute until fragrant — do not brown the garlic.
- Step 3: Add 1 cup cherry tomatoes and cook for 3-4 minutes until they soften and release juice.
- Step 4: Add the drained spaghetti to the skillet along with 1/2 cup reserved pasta water and 1/4 cup chopped fresh basil. Toss for 2 minutes until the sauce coats the pasta evenly.
- Step 5: Season with 1/2 tsp salt and 1/4 cup grated parmesan, then serve immediately.
