  2. Step 2: Heat 1 tbsp sesame oil in a wok over medium-high; stir-fry tofu until golden (8 minutes).
  3. Step 3: Add 2 heads bok choy (cut into 2-inch pieces), 1 tbsp minced fresh ginger, and 3 minced garlic cloves; stir-fry 3 minutes until wilted.
  4. Step 4: Whisk 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, and 1 tsp cornstarch mixed with 2 tbsp water; pour into wok and stir until sauce thickens (2 minutes).
