Stir-Fried Tofu with Ginger and Bok Choy

- 14 oz firm tofu
- 2 heads bok choy
- 1 tbsp fresh ginger
- 3 garlic cloves
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp cornstarch
- 2 tbsp water
Instructions
- Step 1: Press 14 oz firm tofu to remove excess moisture, then cut into 1-inch cubes.
- Step 2: Heat 1 tbsp sesame oil in a wok over medium-high; stir-fry tofu until golden (8 minutes).
- Step 3: Add 2 heads bok choy (cut into 2-inch pieces), 1 tbsp minced fresh ginger, and 3 minced garlic cloves; stir-fry 3 minutes until wilted.
- Step 4: Whisk 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, and 1 tsp cornstarch mixed with 2 tbsp water; pour into wok and stir until sauce thickens (2 minutes).
