Stir-Fried Tofu with Ginger, Garlic, and Soy Sauce

Ingredients
- 14 oz, pressed and cubed firm tofu
- 2 tbsp vegetable oil
- 2 tbsp, minced fresh ginger
- 3 cloves, minced garlic
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1/4 cup water
- 1 cup broccoli florets
- 1/2 cup, sliced bell peppers
- 2, sliced green onions
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a wok over high heat, add 14 oz cubed tofu, and stir-fry for 5 minutes until golden brown on all sides; remove and set aside.
- Step 2: Add 2 tbsp minced ginger and 3 cloves minced garlic to the wok; stir-fry for 30 seconds until fragrant.
- Step 3: Add 1 cup broccoli florets and 1/2 cup sliced bell peppers; stir-fry for 3 minutes until vegetables are bright green and crisp-tender.
- Step 4: Return tofu to the wok, add 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, and 1/4 cup water; toss to combine and cook for 2 minutes until sauce thickens and coats ingredients.
- Step 5: Stir in 2 sliced green onions, and serve hot over rice.
