  1. Step 1: Heat 2 tbsp vegetable oil in a wok over high heat, add 14 oz cubed tofu, and stir-fry for 5 minutes until golden brown on all sides; remove and set aside.
  2. Step 2: Add 2 tbsp minced ginger and 3 cloves minced garlic to the wok; stir-fry for 30 seconds until fragrant.
  3. Step 3: Add 1 cup broccoli florets and 1/2 cup sliced bell peppers; stir-fry for 3 minutes until vegetables are bright green and crisp-tender.
  4. Step 4: Return tofu to the wok, add 3 tbsp soy sauce, 1 tbsp rice vinegar, 1 tsp sugar, and 1/4 cup water; toss to combine and cook for 2 minutes until sauce thickens and coats ingredients.
  5. Step 5: Stir in 2 sliced green onions, and serve hot over rice.
