Stir-Fried Tofu with Pineapple and Bell Peppers

Ingredients
- 14 oz (pressed and cubed) firm tofu
- 1/2 cup pineapple chunks
- 1 (thinly sliced) red bell pepper
- 1/2 cup broccoli florets
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tsp rice vinegar
- 1/2 tsp (grated) ginger
- 1 clove (minced) garlic
- 1 tbsp vegetable oil
- 1/4 cup water
Instructions
- Step 1: Heat vegetable oil in a large skillet or wok over medium-high heat. Add cubed tofu and cook for 5 minutes, turning occasionally, until golden brown on all sides, then transfer to a plate.
- Step 2: Add minced garlic and grated ginger to the skillet, cooking for 30 seconds until fragrant. Add sliced red bell pepper and broccoli florets, stir-frying for 3 minutes until crisp-tender.
- Step 3: Return tofu to the skillet. Add soy sauce, honey, rice vinegar, pineapple chunks, and water. Stir to combine, cooking for 2 minutes until sauce thickens and coats vegetables.
