Stir-Fried Vegetables with Oyster Sauce

- 2 tbsp vegetable oil
- 1 cup broccoli florets
- 1 cup bell peppers
- 1 cup carrots
- 2 cloves garlic
- 1 tbsp ginger
- 3 tbsp oyster sauce
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1/4 cup water
Instructions
- Step 1: Heat 2 tbsp vegetable oil in a wok over high heat until smoking. Add 1 cup broccoli florets, 1 cup sliced bell peppers, and 1 cup sliced carrots; stir-fry for 3 minutes until crisp-tender and slightly charred.
- Step 2: Add 2 minced garlic cloves and 1 tbsp minced ginger; stir-fry for 60 seconds until fragrant and golden.
- Step 3: Whisk 3 tbsp oyster sauce, 1 tbsp soy sauce, 1 tsp cornstarch, and 1/4 cup water in a small bowl. Pour mixture over vegetables and stir constantly until sauce thickens and coats vegetables (about 90 seconds).
